Carrot-Vegetable-Soup
This is a soup, my wife and son ordered for the birthday party of my son. It’s delicious and quick and easy to prepare.
This recipe is for 12 – 15 people (ca. 5 litres):
Ingredients:- 3 Spanish onions
- 3 litres of vegetable juice (I usually take a wholefood juice from Amecke containing tomatoes, celery, carrots, beetroot, sauerkraut, cucumber, paprika and onion.)
- 25 long carrots
- about 5 leaves of laurel
- 3 – 5 cloves of garlic
- about 500g crème fraîche or sour creme
- 5 – 10 teaspoonful of sugar
- 2 – 4 twigs of fresh oregano
- tabasco or chili sauce or cayenne
- oil to fry the onions
- salt and black pepper
Chop the onions, the carrots and the garlic. Pluck the oregano because we only want it’s leaves. Pour some oil into a large pot and sweet the onions over medium heat. It’s possible to fry some of the carrots with the onions for some frying taste. As soon as the onions are translucent (not brown! black is a no, no!!!), pour the vegetable juice into the pot. Now add (the remaining) carrots, garlic and the oregano. Put the laurel into a tea filter, tie it with a piece of thread to the handle of the pot and put it into the soup. Like this, you’re able to control how much of laurel taste is added. Just in case, your construction is swimming on top, cut a small hole into the filter to free the air inside. Now let it boil – but still on medium heat! (Just in case you’re not willing to speckle your kitchen with nice red spots ;-) ). About 15 minutes later, hackle your soup using a hand blender until it gains a nice and creamy consistency (Don’t forget to remove the construction! He, he, he…). After that it’s all about the taste. If you want more laurel, put the construction back into the pot. Add the chiliwhatever for the right spicyness – and take care in case you’re cooking for children. The quantum of sugar to be added is different every time. Carrots and onions may be quite sweet by themselves and it’s possible that you don’t need to add any sugar at all. So be careful! Nobody I know will appreciate some kind of boiling vegetable lemonade. Add salt and pepper…
Do you like the taste by now? Ok! Prepare each soup plate with a tablespoonful of crème fraîche (sour cream) and pour the soup over it.
